My Winter Sunshine Tonic - Nadia Lim

I wanted to share this little drink that I have most mornings during winter that I like to call my ‘Winter Sunshine Tonic’. It’s a delicious concoction of some amazing ingredients (ginger, apple cider vinegar, Manuka Honey and lemon) that’ll help ward off the nasty bugs that go around at this time of year and keep you bright and full of beans throughout winter!

So far, fingers crossed, despite all the travel and contact with different sick people I’ve managed to completely avoid any colds or flu this year (and last year, too). Of course you could say it’s good luck; however, I reckon having this every morning, along with getting a good night’s sleep (as much as pregnancy and a toddler will let me!), eating well and getting some winter fresh air and sunshine, has helped HEAPS.

As well as containing a heap of lovely vitamin C and antioxidants, this tonic is also great for getting your digestive juices going (literally!). Clever apple cider vinegar and lemon in warm water helps stimulate stomach acid and bile production, providing support with your digestion. Lots of people swear it helps to relieve bloating, indigestion and heartburn (thanks to better digestion) – in fact, I reckon my heartburn is nowhere near as bad in this pregnancy as it was with my first! So it really is a great way to start off your day, even out of Winter. Enjoy!

Nadia’s Winter Sunshine Tonic
– 1 teaspoon Manuka Honey
– 1 cinnamon stick and/or sprig of thyme or rosemary (optional)
– 1 teaspoon grated fresh ginger
– ½ – 1 teaspoon grated fresh turmeric (optional)
– 1-2 teaspoons apple cider vinegar
– Juice of ½ lemon, tangelo or grapefruit

Place manuka honey, cinnamon stick/thyme sprig, ginger and turmeric in a mug and top up with about 200ml boiling water.
Stir (to dissolve honey) and leave for a few minutes to allow flavours to infuse. Then stir in apple cider vinegar and lemon/tangelo/grapefruit juice.
Sip away and feel warm and nourished from the inside out!
